研究领域:

主要从事食品生物技术、水产品生物加工和海洋食品生化工程研究,主要工作包括:

(1)食品酶学与生物催化:食品用酶的快速发掘和高效表达,催化机制解析和理性分子改造,生化反应过程优化与调控,以及酶与生物催化转化技术在食品加工过程的应用研究。

(2)水产品生物加工与海洋生物资源绿色高效利用:针对海洋生物资源及其加工副产物,利用生物催化、生物转化和生物发酵等生化工程技术,进行生物加工和绿色全利用,开发新型海洋食品、营养功能食品、保健食品和特医食品等高附加值产品。

(3)海洋功效物质的合成生物学与系统代谢工程:针对食品功效物质的生物合成,通过代谢工程与合成生物学相关技术开展代谢途径的设计、重构与调控研究,并结合生化工程模型化控制理论开展发酵过程优化、调控和放大研究。

主持项目:

近五年主持国家级课题4项,省部级及其他课题10余项。代表性项目如下:

(1)国家自然科学基金:α-新琼二糖水解酶生成奇数琼寡糖的催化机制和产物构效关系研究(项目负责人)

(2)国家自然科学基金:新型β-琼胶酶分子改造及其对琼胶寡糖聚合度的影响机制研究(项目负责人)

(3)国家现代农业产业技术体系项目:虾蟹副产物综合利用(项目负责人)

(4)山东省重点研发计划:生物发酵与催化转化耦合法提取甲壳素、虾青素等海洋活性物质的产业化关键技术(项目负责人)

(5)青岛市应用基础研究计划:特定酰基DHA-磷脂的生物催化机制和工具酶的理性设计研究(项目负责人)
